Characteristics of Ivy Honey
This unique Organic Raw honey tends to be rare due to the Ivy plants short bloom window. Complicating matters, Ivy honey has a high glucose content causing the honey to crystallize almost immediately after it has been loaded. To produce this honey, beekeepers must be very timely with harvesting otherwise the honey will be too hard to extract. Even after the honey has been extracted, the honey retains a unique thick viscous quality. It has a unique flavor and when first experienced is not easily forgotten.
Flavor: Sweet with a slightly toasted and bitter aftertaste.
Smell: Very Aromatic
Color: Opaque toffee-colored honey
Physical Consistency: It crystallizes immediately; viscous consistency. Thin Honey crystals.
Uses: Excellent with cheeses and with yogurt.
